• Calypso — Complex fruity & citrusy aroma with notes of pear, apple, sweet lemon-lime, and earthy tea.
• Hallertau Blanc — Floral & fruity with passion fruit, grapefruit, pineapple, grape & lemongrass overtones. Alpha Acid ~9.0–12.0%.
• Chinook (US) — High-alpha variety from Washington, developed by the USDA breeding program and released in 1985.
• Cascade — Medium-intense floral, citrus & grapefruit tones. Alpha Acid ~4.5–7.0%.
• Citra — One of the most recognized and used flavor and aroma hops since its 2008 release.
• Mt. Hood — Mild, herbal & somewhat pungent or spicy. Alpha Acid ~4.0–8.0%.
• Willamette — Mild & pleasant, with slightly spicy & floral tones. Alpha Acid ~4.0–6.0%.
• Mosaic — Complex array of tropical fruit, citrus, berry, herbal, earthy & pine characteristics. Alpha Acid ~11.5–13.5%.
• Apollo — Very high alpha with good storage stability and a low cohumulone ratio — excellent for bittering.
• Cluster — Classic American variety with a long brewing history; solid all-purpose bittering hop.
• Nugget — Mild & pleasant with spicy, herbal tones. Alpha Acid ~12.2%.
• East Kent Golding — The queen of English hops, with a pedigree dating back to 1790.
• Tettnang — Traditional German variety; a fine, noble aroma hop used for lagers, wheat beers & ales.
• Summit — Distinct spice, earth, onion, garlic & citrus tones. Alpha Acid ~16.0–19.0%.
• Northern Brewer — Medium-intense herbal & floral tone. Alpha Acid ~7.0–10.0%.
• Galaxy (AU) — The preeminent Australian hop, arising from 1990s breeding programs with German ancestry.
• Saaz — Very mild, with pleasant earthy, herbal & floral overtones. Alpha Acid ~2.0–5.0%.
• Magnum — High-alpha variety with a delicate aroma and some spice and fruit character. Alpha Acid ~11.0–16.0%.
• Fuggle — English hop selected as a chance seedling in 1861; once a dominant force in English hop acreage.
• Columbus — Pungent black pepper & licorice characteristics with subtle citrus overtones. Alpha Acid ~14.0–16.0%.
• Warrior — Mild & resinous with subtle citrus, pine & herbal characteristics. Alpha Acid ~15.0–17.0%.
• Perle — Delicate floral, fruit, spice & mint tones. Alpha Acid ~6.0–10.0%.
• Hersbruker — Landrace variety originating from the Hersbruck region of Southern Germany.
• Liberty — American hop from breeding German Hallertau Mittelfruh with a USDA male, released in 1991. Best used as an aroma hop.
• Hallertau Mittelfruh — Mild, yet spicy, with floral & citrus tones. Alpha Acid ~3.0–5.5%.
